Why this scene's absence is important: Without the elderly couple calling each other by name and explaining why she wasn't willing to leave him, it's less clear later why there is a first class couple in bed as water floods in. The audience can figure out that they probably had a chance to leave but that she chose to stay with him, but this scene would have provided the dialougue to know more, and therefore care more, about them. This also would have set up the atmosphere in which Rose makes her decision not to leave Jack.
